About pumpkin pie from pumpkins - don't bother. Every good cook I know says just buy the stuff in the can. Jack O'Lantern pumpkins and pie pumpkins are different, so the results wouldn't be good (there's your excuse). Sometimes you can find pie pumpkins at the natural food store or farmer's market. "Sugar baby" is a common one. It might be good roasted and eaten like squash, but I wouldn't go to all the trouble of making pie out of it (besides, I don't like pumpkin pie.
